Our Rosé of Merlot is a fan favourite. Aromas of strawberry, summer florals and a creamy textured palate enables this wine to work well on all occasions and with most dishes. We achieve this versatile style of Rosé by picking at the perfect time and by enhancing palate depth in the winery through barrel fermentation and lees contact.
The gently squeezed Merlot juice was kept cold and stirred with its fine pulp for two weeks before fermentation. 40% was fermented wild and in barrel with regular lees stirring. The fruit was taken from our vineyard in its third year through organic conversion.
